At the moment the Buchner Pinot has one thing over all the other Pinot Noir in the world - and that is the unique oak barrel in which it matures. The barrel concept, developed together with the brothers Mittelberger, preserves the surface-to-volume ratio of a barrique, but provides for a significantly faster maturing process. Maturing requires wine to diffuse to the next wine/wood/air interface, and since the „Aeriaus“ - as we have called the new barrel - exhibits two such surfaces, an outer and an inner one, the average distance to the next interface is greatly reduced and maturing is completed in 8 - 10 months instead of 12 - 18 as in a classical barrique.
